The AU makes this UI so versatile, that you can use any number of the custom windows in this UI in conjunction with the default windows (and/or other custom mods not included with this package). The easiest way to revert back to the default windows is to access the Features tab in the Advanced setting of the AU and uncheck any unwanted windows, delete the thorui folder in your EverQuest II/UI directory, then run the updater.
