Kine, you should entirely remove your old ProfitUI folder (located in the Everquest 2\UI\ folder) before installing the 3.x release (extract into your Everquest 2\ folder as always).
You can keep your UI settings but will likely need to adjust your hotbar sizes. Don't forget to reinstall the persona window background images if you do not want to have a white background in the persona window. And you will need to redownload EQ2Map (you can backup the eq2map folders manually but it is probably not worth the hassle). If that doesn't help maybe post a screenshot of what your hybrid looks like?
