This has happened to me several times. What has worked for me was just to run the /load_uisettings command and reload the same settings for the character you just logged on as. My chat window has always automagically reappeared. I don't know if this will work for the statusbar, never had that happen. Not sure what causes it in the first place, but at least this will save you having to reconfigure.
