I am at the moment level 22 provisioner. I entered the Iron grip society in Freeport. I got a quest to produce 10 savory vanilla cakes. This drives me completely crazy! What's the purpose of asking somebody to produce 2nd level quality item if you can do better? Even though I tried to fail on purpose, I finished 99% of the time by producing a better quality item.... It's extrmely time consuming (need to go and gather the raw items again and again}. Somebody can give an advice how to proceed if I want to reduce the quality of the things, I am producing? You gain status within the tradeskill society with each task you perform (not quite sure what exactly the higher status does, though; perhaps it allows you to buy basic tradeskilling goods at a dscounted rate?).

In order to produce a lower quality item, all you need to do is hit the Cancel button once you create the necessary quality of the item.
