Is there a way to stop the mouse over hint boxes appearing on certain objects ?

It depends on what objects. Some of the tooltips are pushed from the server, whereas others you can manage dynamically. In short, yes AND no ^_^

I am changing player.xml and adding all the stats - str, mit, wis etc.

The main thing I want to get rid of is the standard player information that pops up on the default player.xml

You can do it for any item.. look up info on 'DynamicDataFilter's
