Can you direct me to the instructions for the QuickMacro Button Config?

If I install it can Quick macro can I deactivate it without a complete reinstall of Profit (which I love by the way!)

If you use the Auto-updater you will need to set _ProfitUI_QuickRaidButtons.txt to be ignored. As the FAQ says, make a backup copy of this file. To uninstall it, just put the backup copy in.
